So Tender! Balinese Style Braised Beef You'll Love 巴厘风味焖牛肉 Southeast Asian Beef Shank Knuckle Recipe
Serves 3-4
Ingredients
700g (24.7 oz) beef shank, knuckles, brisket or short ribs, cut into large chunks
30g (1.1 oz) young ginger, sliced
5 shallots, finely chopped
3 stalks lemongrass, white parts only, lightly smashed
4–5 kaffir lime leaves, lightly bruised
5 cloves garlic, finely chopped
1 tsp coriander seed powder
½ tsp ground nutmeg
2 tsp turmeric powder
½ tsp chilli flakes
2 tsp salt
120ml (4.2 fl oz) kecap manis (Indonesian sweet soy sauce) Note: if using a very thick brand like ABC, reduce this to 80ml (2.8 fl oz) and adjust to taste at the end of cooking
Water, enough to completely submerge the beef
A little cornflour solution (to thicken)
