RECIPES
Protein Banana Waffles
Ingredients
* 2 medium ripe bananas
* 2 large eggs
* ⅔ cup vanilla protein powder
* ¼ cup rolled oats (4 tbsp)
* 1 tsp baking powder
* 1 tsp cinnamon
Instructions
1. Add everything to a blender and blend until smooth.
2. Let the batter rest for 5 minutes.
3. Lightly grease your waffle maker.
4. Cook until golden and crisp.
Waffle maker -
Overnight chia oats
Ingredients
* 2 tbsp chia seeds
* 4 tbsp rolled oats
* 1 cup unsweetened almond milk
* Cinnamon and vanilla extract to taste
Instructions
1. Stir everything together in a jar or bowl.
2. Refrigerate overnight (or at least 2 hours).
3. Stir before eating.
Asian chicken wrap
Ingredients
- 6 ozs cooked chicken breast, shredded
- 2 whole wheat tortillas
- 1/2 cups shelled edamame, thawed
- 1 cup shredded coleslaw mix, shredded
- 1 tbsp creamy peanut butter
- 1 tbsp low-sodium soy sauce
- 1 tbsp rice vinegar
- 1/2 tbsps honey
Cooking instructions
1. Whisk peanut butter, soy sauce, rice vinegar, and honey in a large bowl until smooth.
2. Add shredded chicken, edamame, and coleslaw mix to the bowl and toss to coat.
3. Warm tortillas in a dry skillet over medium heat for 15 seconds per side.
4. Divide the chicken mixture evenly between the two tortillas.
5. Fold in the sides of each tortilla and roll tightly to secure the filling
Mediteranean cod
Ingredients
- 9 ozs cod fillet
- 1/2 cups canned chickpeas, drained and rinsed
- 1/2 cups zucchini, sliced
- 1/2 cups red bell pepper, sliced
- 1/4 cups cherry tomatoes, halved
- 2 tbsps extra virgin olive oil
- 1 clove garlic, minced
- 1/2 tsps dried oregano
- 1/4 tsps salt
- 1/4 tsps black pepper
- 1/2 lemon, juiced
Cooking instructions
1. Preheat oven to 400°F.
2. Toss chickpeas, zucchini, bell pepper, and tomatoes with 1 tbsp olive oil, oregano, salt, and pepper on a sheet pan.
3. Roast vegetables for 12 minutes until slightly softened.
4. Move vegetables to the sides and place the cod fillet in the center of the pan.
5. Drizzle cod with remaining 1 tbsp olive oil, lemon juice, and minced garlic.
6. Bake for 10-12 minutes until cod is opaque and flakes easily with a fork.
