When is a lasagna a lasagna, when is not a lasagna? Today we find out with 80yr old Rosi from Ormea as she prepares a local pasta dish known as lasagne di Ormea. Despite the name it has almost nothing in common with the baked lasagna most people know. It belongs to the tradition known as Cucina Bianca ("White Cuisine"), a pastoral cuisine based on simple ingredients that shepherds and mountain families had available: flour, potatoes, dairy products, wild herbs and foraged mushrooms. Rosi made two different condimenti, both delicious. My personal favourite was the one with leeks.
