Chorizo is a super ingredient to have in your fridge. it's relatively cheap, it lasts ages, and it's a great way to inject a load of flavour into your meals for not a lot of money. So I created this one pan chorizo rice that costs less thana fiver, and can be on the table in 20 minutes or less. So it's great for busy families, or those who want to meal prep, as once cooled this can also be frozen into portions.

To make my budget chorizo rice you will need:
Feeds 4
►300g rice (I used basmati)
►1 whole chorizo (approx 225g)
►1 small onion
►1 red or green pepper
►2 cloves of garlic
►500ml chicken stock
►1 can of whole plum tomatoes
►1 tsp paprika (smoked or sweet)
►1 tsp of oregano
►Salt & pepper to taste
