1258g (2.7 lbs) sirloin tip roast cut into 2 inch pieces
3 tbsp avocado oil
Salt and black pepper

1-1/2 cup diced onion, about 1 large yellow onion
3/4 cup large dice cut green bell pepper, about one small bell pepper
3/4 cup large dice cut red bell pepper, about one small bell pepper

1 tbsp sweet paprika
1 tsp dried oregano, I used dried Mexican oregano
1/2 cup dry red wine
2 cups canned diced tomatoes
4-1/2 cup warm beef broth, I used 4-1/2 cup warm water + 6 tsp Better than bouillon beef base
1/3 cup dried apricots, about 6 dried apricots
2 cups butternut squash, 1-1/2 inch pieces

1-1/2 cup sweet potatoes, 1-1/2 inch pieces
1-1/2 cup potatoes, 1-1/2 inch pieces
3 fresh corn cobs, cut into smaller chunks
