Leek & Potato Soup: Serves 4
1 tbsp vegetable oil or butter
1 white onion, sliced
225g potatoes, cubed
2 medium leeks, sliced
1.2 litres vegetable stock
150ml single cream
salt and freshly ground black pepper
finish with olive oil and serve with toasted bread
Butternut Squash Pasta: Serves 2
250g roasted butternut squash
200g pasta of your choice, I use rigatoni
3tbsp creme fraiche or mascarpone
chilli flakes to taste
parmesan to taste
crispy bacon lardons to serve
hot honey to serve
Chickpea & Red Lentil Curry: Serves 4
1tbsp neutral oil
1 red onion, diced
4 cloves of garlic, diced
1 thumb size piece of ginger
1/2 red chilli, de-seeded and diced
1tsp (curry powder, cumin seeds, smoked paprika)
1/2 tsp coriander seeds & mustard seeds
1 vegetable stock cube
1 can of chopped tomatoes
1 can of coconut milk
1 large jar or two small cans of chickpeas
240g red lentils
fresh coriander to serve
natural yoghurt to serve
naan breads to serve
Peanut Butter Cookies: (makes 10-12)
170g plain flour
1/2 teaspoon baking powder
1/4 teaspoon salt
113g unsalted butter, softened to room temperature
100g light brown sugar
50g granulated sugar, plus 100g for rolling
1 large egg, at room temperature
185g smooth peanut butter
180g dark chocolate, chopped
1 teaspoon vanilla extract
bake at 180 degrees celsius fan for 10-12 minutes.
