Cooking giant lamb ribs in a handmade volcano oven in the mountains of Azerbaijan.
In this traditional outdoor cooking adventure, a unique volcano-shaped clay and stone oven is built from natural materials — mountain rocks, clay, straw, and wood. Once the structure is heated with a large fire, massive lamb ribs are marinated with garlic, pomegranate syrup, honey, and fresh herbs.
The ribs are carefully stuffed with a rich mixture of bulgur and vegetables before being sealed inside the volcano oven to roast slowly over the heat of the fire.
While the meat cooks, another rustic dish is prepared — a hearty meat and potato pie baked inside a golden crust.
