Lazy Chicken
2 lbs boneless skinless chicken thighs
1 bag frozen peppers and onions
1 jar of your favorite BBQ Sauce
1 can purreed pineapple
1/4 cup of soy sauce
Cook on high for about 2=3 hours or until chicken is cooked through
Take the chicken out, slice it up a bit, and throw it back in
Serve over rice.
Italian Beef Sandwiches
One big old fat chuck roast
A bottle of beer(can also use beef broth)
One large, sliced onion
2 teaspoons or a packet of Italian seasoning
A jar of sliced pepperoncini, including the juice
10 cloves of mashed garlic
cook it on high for six-ish hours
Take the chuck roast out and pull/shred it then put it back into the juice and mix it all up… Serve it on hoagie rolls with sliced provolone.
Chicken tikka masala
2 pounds boneless, skinless chicken thighs, cut into 1-inch pieces
1/2 cup whole-milk plain yogurt (not Greek)
1 large yellow onion, diced
3 cloves garlic, minced
1 tablespoon peeled and minced fresh ginger
2 teaspoons ground coriander
2 teaspoons garam masala
1 teaspoon ground cumin
1 teaspoon ground turmeric
2 tablespoons tomato paste
1 (15-ounce) can diced tomatoes
i can coconut milk
Place the chicken, yogurt, and 1 teaspoon of the salt in a 4-quart or larger slow cooker and stir to combine.
Heat the oil in a large frying pan over medium heat until shimmering. Add the onion and cook, stirring occasionally, until tender, about 8 minutes. Add the garlic, ginger, coriander, garam masala, cumin, and turmeric and cook until fragrant, about 1 minute. Add the tomato paste and cook until darkened in color, about 1 minute. Add the drained tomatoes and 1/2 teaspoon of salt and bring to a simmer, scraping up the browned bits from the bottom of the pan. Transfer to the slow cooker and stir to combine with the chicken.
Cover and cook on the HIGH setting for 4 hours or LOW setting for 8 hours. Stir in the cream or coconut milk. If you prefer a thicker sauce, leave the slow cooker uncovered and cook on the HIGH setting for 30 minutes. Taste and season with salt as needed. Serve garnished with cilantro with rice or naan.

3-4 pounds pork belly
1/4 cup brown sugar
1 tsp five spice
1 star anise
250ml good quality chicken stock
1 tablespoon fish sauce
3/4 cup soy sauce
1 1/4 cups chicken broth
Cook on low for 6 hours
Steamed white rice for serving
Cucumber Salad
small cucumbers, shaved lengthways in thin ribbons
1 green onion, thinly sliced diagonally
1 inch piece of fresh ginger peeled and cut into thin matchsticks
1 tablespoon peanut oil
2 teaspoons rice vinegar
